Sheep and goats are part of our landscape. Their milk is made into cheese and the meat of the lamb and the kid are used in several dishes, often served with pulenda, a traditional porridge of chestnut flour.
The motto of the Corsicans in this valley could be seen as the old proverb “eat, drink and be merry”. There are many traditional products: wine, biscuits, desserts, high-quality bread, cheese, pâté of starling and of wild boar, pork meats (lonzu, prisuttu, figatelli, coppa and salsiccia); delicious honey from the many flowers of the maquis and jam made from bilberries, arbutus berries, chestnuts, figs and citrus fruits. In addition, each village in the valley has its own specialities, variations and secrets.
And perhaps once the gourmet has left the valley and gone home, he will declare, paraphrasing Mérimée: “Here, we do not have the excellent hams of the Valley de Ostriconi; I always think of them with emotion.”
